Our Story

From Lyon to Koh Tao

Jean-Marc Delatour grew up in a Lyon bakery — his grandfather's, in the heart of Vieux Lyon, open for 40 years. After earning his CAP boulanger and spending 8 years in top Parisian bakeries including Du Pain et des Idées, he took a trip to Thailand in 2019. He never went back.

He started baking in a friend's kitchen, delivering loaves by bicycle to restaurants across the island. In 2022, he opened Le Levain — a tiny bakery with a custom stone oven, six terrace tables, and sand between the floorboards.

"Good bread takes time, water, flour and salt. Here, I just add a little bit of Thailand."

Today, Jean-Marc bakes alongside Somchai, his local apprentice, while his partner Nong runs the front and the smoothie bar.

Where exactly are you located?
We're at 18/4 Moo 3 in Chalok Baan Kao, on the south side of Koh Tao. Look for our hand-painted sign — you'll smell the bread before you see us.
What are your opening hours?
We're open Monday, Tuesday, Thursday and Friday from 6:30 AM to 2 PM, and Saturday-Sunday until 3 PM. We're closed on Wednesdays. Popular items sell out by mid-morning — come early for the best selection.
Can I order bread for my restaurant or a custom cake?
Absolutely. We supply sourdough daily to several restaurants on the island. For custom birthday cakes or large orders, message us on WhatsApp at least 48 hours in advance.
Is everything really made by hand?
Every single thing. Jean-Marc works with a sourdough starter he's kept alive since 2018, brought from France. No industrial mixes, no additives, no shortcuts — just slow fermentation and a stone oven.
Do you deliver on the island?
We deliver by bicycle to Sairee Beach and Mae Haad for restaurant orders. For individual orders, come visit us at Chalok — it's worth the trip.
